Seriously though, I've done a fair share of seminars and training sessions and i've found a few things that really make a difference for these types of setups in general:
1. Smaller groups allow for more focused work. Sometimes people get lost in the crowds
2. If the scene is too formal people often try harder to blend in than actually pay attention to whats going on. Also in a less formal scenario one might feel a little more comfortable voicing any concerns or questions.
3. A little bit of interaction stimulates the brain in different areas and I for one get incredibly bored and irritated if I had to just sit there and listen to some expert waffle on for hours. There's a principle I learnt in sales management: "If you say it, I question it, If I say it, I believe it" If I believe it I'll probably remember it too.
Now more specific to the subject,
I would personally like to see some focus on problem identification. Like I think darkne55 mentioned ailment or distress signals, something like that. We can follow every step in care and housing but how do we know when there is a problem?
Perhaps a quickstart guide to identification of locals?
Now I shall take a step back and leave you guys to do whatever it is you do, evidently you do it well!
